Plenty of info & journals on CGOAB. There are two basic routes; coastal on highway 1 or inland through the mountains. The coastal route traditionally carries all the heavy traffic between the major cities so is busy but there will be options along the way to follow minor roads. The inland / mountain route should be quieter and more interesting.

Plenty of websites about traveling in Vn; Travelfish, GTRiders, VietnamCoracle and bike tour companies providing suggested routes. Reckon gpx routes unnecessary unless you're going out in the bush / remote. Komoot is good, i reckon, for daily routes. Have a good trip. Richard
